The weather is warming up in our area and it’s perfect for salads.
When I don’t feel like cooking, I make this salad from left over organic rotisserie chicken that we buy from the farmer’s market.
We tried to eat the Costco rotisserie chicken but my daughter had a reaction to it.
And when I looked closer at the ingredients, there are anti-caking agents and other weird stuff listed.
I never thought to read the ingredients before so I was shocked.
So no more Costco rotisserie chicken for us, although we used to eat it a lot and it’s a great deal at $4.99.
This is simply shredded rotisserie chicken over spring salad mix (from Costco).
I made my own salad dressing too, which is super easy to make and very inexpensive.
Rotisserie Chicken Salad Recipe
Shredded rotisserie chicken
Salad greens
Shredded cheese (optional)
Place ingredients in a bowl.
Apple Cider Vinegar Dressing
1/8 cup of olive oil
1/8 apple cider vinegar
1 tsp of agave nectar
Salt and pepper
Whisk everything together in a bowl. Add salt and pepper to taste.
